1What's the deal with decanting?
I'm just curious if I need to be decanting every single bottle I drink, or if it's specific wine vintages or varietals that need this treatment?

The deal is that usually ppl use it for 2 reasons:
1) On old wines that may have sediment. If you pour it slowly into a decanter you can avoid some of the 'gunk' at the bottom.
2) To aerate the wine. If you are drinking a young wine it can help the flavor to give it some air. Decanters do this much better than simply opening the bottle.
